Kids are somehow always battling off a cold. And any parent knows that when your kid is sick on any level, you want to do everything you can to get them better. Whenever Hubbs and I are feeling under the weather, we try to pump up the vitamin C and get back to 100% quickly! So I thought I’d do the same for the kids, but in a much more fun way!

I have had Popsicle molds for a while now, and occasionally when I over estimate when making smoothies the surplus goes in the freezer. The kiddos enjoy these year round frozen treats, which Mom only allows while in the tub! (Genius right! For a long time it was the only way to get E to even get in the tub… talk about everyone being happy!) I also love that I know exactly what is in this “special treat.” Which takes the mom-guilt right out of letting them have a “tubby treat” everyday!

This “recipe” is more of a toss together and a rough estimate of what my Popsicle molds could hold. So adjust accordingly for what you have. If you do not have Popsicle molds you can purchase them anywhere, especially in the summer time. I’ve spotted nice sets at my local Dollar Tree, or these drip free ones on Amazon. In a pinch you can use an ice cube tray or small Dixie cups, then snip a few straws, or use carrot sticks for handles.

Pineapple-OJ Yosicles

Prep: 10 mins | Chill: 4 hours | Total: 4 h 10m   8 servings

INGREDIENTS

1 cup of Orange Juice
1 cup of Pineapple Juice (one mini 8 oz can)
2 Tbsp of Greek Yogurt

DIRECTIONS
  1. Mix together all ingredients in a pitcher until well blended.
  2. Pour into molds; make sure to leave enough room at the top for the liquids to expand when freezing.
  3. Freeze about 4 hours, or overnight.
  4. Run outside of plastic mold under hot tap water to “loosen” the Popsicle before pulling out.
TIPS
  • With using Greek yogurt the mixture may not be perfectly smooth & that is ok!
  • Let the kids help! This is easy & simple – plus if they help, they tend to want to eat the healthy treats!
  • No one said Mom (or Dad) can’t have one too! Enjoy!

This “recipe” can easily be adjusted or changed. Use it as a jumping point to mix up something different your kids would love. Think “smoothie” and even use frozen fruit in the blender. Or add in veggies for those picky eaters! The possibilities are ENDLESS!
