When my kitchen was being renovated last month, I packed up the girls to be out of the house & out of the way. Which isn’t hard when we love running around town on adventures. But I didn’t want to have to pack a bunch of food or eat out the entire time we weren’t at home. So it was a huge blessing when my girlfriend & also a mother of two,  invited us over after our Mommy & Me dance class to play. She then text the sweetest line ever – ‘I’ll make lunch for everyone.’ And I was like ‘What!! Yes, please, you’re amazing, thank you, thank you, thank you.’

I mean you know you lucked out with awesome Mommy friends when they JUST GET IT! Because really I am sure she thought it was nothing to serve my kids mac and cheese, and toss together a quick meal for us. But to me, displaced with a demoed kitchen, it meant everything! She just knew its was one less thing I had to think about, because if the roles were reversed I’d do exactly the same for her. (She is also one of my avid readers, so thank you again!)

So that Friday afternoon I walked into her house to a grilled chicken and strawberry salad with THIS dressing on it. First, I said “Woah you out did yourself.” Second, I gobbled it all up and asked for the recipe! YUM, I mean sooo good! After that lunch, that dressing was all I could think about. I needed to make it again… and as luck would have it, I was able to also “pay it forward.” This time at a play day with a different (but equally awesome) girlfriend, whom just had her second child & was very much in the “sleepless night-midnight feeding-newborn” stage. And I thought ‘I bet she would like a chicken & strawberry salad.’ So two kid lunch boxes & a giant bowl of salad with my dressing shaker, and we were out the door.

And that, my friends, is how you make the world a better place for everyone. With one pay-it-forward salad at a time! I mean really what else do parents of little ones need? I mean we spend all day making sure our nuggets’ every need is met. But do we ever once think “I should go pee before I leave the house” (something I always forget for myself!) or “what would I like for lunch today” (who else eats random scraps of things, while standing?). We, sometimes, just want someone to feed us. Hand a distracted parent a meal that is already made, no prepping, no dishes, no cooking AND we don’t feel guilty because it isn’t pizza! And you would have made a new friend, a veryyyy happy brand new friend! So find a friend & make them a salad with this dressing, the recipe has plenty to share!

Sesame Poppy Seed Friendship Dressing

Prep: 10 mins   |   Chill: 1 hour   |   Total: 1h 10m   |   6 servings  |   209 calories

2 Tbsp sesame seeds
1 Tbsp poppy seeds
/4 cup white sugar
1/4 cup + 1 Tbsp olive oil
1/4 cup distilled white vinegar
1/4 tsp paprika
1/4 tsp Worcestershire sauce
1 Tbsp minced onion

  1. Combine ingredients, by whisking in a medium bowl, using a dressing shaker or other tightly closed container.
  2. Cover and chill for at least one hour.
  • This dressing can be enjoyed over your favorite salad greens. Grilled chicken and sliced strawberries also pair nicely for a fresh summer salad.

Kick and enjoy lunch out on the patio with this quick and easy homemade dressing!
